Dark Chocolate Potato Truffles
Ingredients
300g dark chocolate buttons
2 1/2 tblspn cream
125g butter
1/2 medium potato, cooked, mashed
3/4 cup coconut
1/2 cup almond meal
2 1/2 tblspn Drambuie or any other liqueur
100g dark chocolate buttons, extra
Directions
Place a bowl over a saucepan of boiling water. Do not allow the bowl to touch the water. Add chocolate buttons, cream and butter.
Stir until the mixture has evenly melted. Remove from the heat.
In a separate bowl, mix the almond meal, mashed potato, coconut and liqueur.
Combine both mixtures, mix gently. Refrigerate until set.
Roll mixture into small balls and place in the freezer for a further 10 minutes.
Melt extra chocolate as before. Set aside for five minutes. Dip each truffle into the chocolate to coat.
Place on a tray and refrigerate for 15 minutes.
