Old MacDonald's Potato Box Recipes 

Potato Biscotti

Ingredients

125gms butter
150gms mashed potatoes
¾ cup sugar
2 medium size eggs
1 tbsp brandy
1 tsp ground anise
125gms almonds
Pinch of salt

Directions

Cream the sugar and butter in a mixing bowl, then add the eggs and mashed potato.
Beat slowly until fluffy.
Fold in brandy and the remaining dry ingredients, including the almonds. Be careful not to over mix.
Divide the mixture into two rolls about 4cm in diameter and the length of the baking tray.
Bake in 160°C oven for 20 to 25 minutes or until the biscotti is firm to touch.
Remove from the oven and set aside to cool for about ten minutes.
With a sharp knife, cut the biscotti diagonally into 2cm thick slices and return to the oven.
Bake for 5 minutes, turn the tray around and bake for a further 5 minutes.
Remove from oven and place biscuits on a cake rack and set aside until cool.
Store in an airtight container until required.
