Lime and Potato Puddings
Ingredients
2 medium potatoes, peeled, cooked, mashed, cooled
1 1/2 tblspn (30g) butter
1/3 cup or raw sugar
2 eggs - separated
2 limes juice and zest
1 tblspn sultanas
2 tspn mixted spice
1/4 cup self-raising flour
Icing sugar for dusting
Directions
Place butter, potatoes, sugar, rind, sultanas and flour into bowl. Add egg yolks, lime juice & 1 tspn mixted spice. Mix well.
Beat egg whites until soft peaks form and gently fold into the mixture.
Spoon into greased 1/3 cup-size muffin pan. Sprinkle with remaining mixed spice. Bake in 180 degree oven for 20 minutes or until firm to touch and golden brown. Let stand 5 minutes before turning out.
Dust tops with icing sugar.
