Potato Cakes with Tomato and Chilli Salsa
Ingredients
4 medium potatoes, peeled and quartered
½ cup low-fat milk
Chopped parsley or chives
1 small onion, finely chopped
½ cup lean cooked bacon, chopped
1 egg, beaten
A little flour
Salsa:
2 tomatoes, chopped
1 small red onion, chopped
1 tablespoon lemon juice
1 pinch chopped basil (optional)
A little chilli sauce to taste
Directions
Place the potatoes and milk in a covered microwave dish and cook on medium for approximately 8 minutes.
Mash when tender. Stir in the chives, onion, bacon, seasoning to taste and sufficient egg to bind. Shape into patties with a little flour.
Spray a pre-heated, non-stick frypan with a little olive oil and cook patties on each side until golden.
Salsa: combine all ingredients and serve with the potato patties.
