Potato and Tomato Bake
Ingredients
4 medium potatoes
2 tomatoes
1 onion
1 teaspoon crushed garlic
Olive oil
Fresh herbs: oregano, rosemary or thyme
Salt and pepper
Directions
Slice the vegetables into chunks or thick slices.
Flavour with garlic and drizzle with a good coating of olive oil.
Add seasoning and herbs and mix through. Bake in a 200°C oven until the vegetables are cooked through and golden on top.
Stir occasionally to distribute the juices and flavours.
