Old MacDonald's Potato Box Recipes 

Trio of Potato

Ingredients

2 medium potatoes, chopped
1 tblspn milk
1 tblspn plain flour
1 egg
1/2 white onion, finely chopped
1 clove garlic, crushed
1 carrot, diced
250g frozen spinach, thawed, drained, chopped
Salt and pepper

Directions

Lightly grease four ramekin dishes (2/3 cup capacity).
Cook the potatoes in a saucepan of boiling water for 10 minutes. Drain and mash thoroughly.
Mix in milk, flour and egg.
Divide into three equal portions in separate bowls.
Boil carrot for 10 minutes or until tender. Fold into one of the potato portions.
Fry onion and garlic for 3 minutes or until soft and golden. Fold into another of the potato portions.
Repeat with spinach.
Spoon a layer of each mixture into each of the ramekins and smooth over the top.
Cover with foil and place into a roasting tin.
Half fill the tin with boiling water.
Cook in a preheated 180C oven for 40 minutes or until set.
