Exotic Algerian Potatoes
Ingredients
2 tblspn olive oil
1/2 cup tomato puree
12 cardamom pods
2 cups liquid beef stock
1.5kg potatoes, peeled and cut into thick slices
5 cloves garlic, peeled and crushed
3 tblspn tomato paste
1 tspn chilli flakes
Salt to taste
Directions
Heat the oil in a large, lidded frying pan.
Add the potatoes, garlic, tomato puree, tomato paste, cardamom pods, chilli flakes and salt, fold together well.
Add the stock and bring to the boil, cover and simmer for 20-30 minutes until the water has been absorbed and the potatoes are soft.
