Potato Puffs
Ingredients
1kg potatoes, peeled and mashed
½ cup low-fat cheddar cheese
2 tablespoons plain flour
3 eggs, beaten
2 cloves garlic, crushed
2 tablespoons fresh parsley, chopped
1 tablespoon butter, melted
Salt, pepper and nutmeg
Directions
To the mashed potatoes, add cheese, butter, flour, eggs, garlic, parsley, salt, pepper and nutmeg to taste. Mix well.
Place large tablespoons of the mixture onto a greased baking tray and bake in a preheated 200°C oven for about 10 minutes.
Brown under the grill until golden and serve.
