Pakora
Ingredients
4 unpeeled potatoes
3/4 cup plain flour
1 tblspn Malay curry powder
1 cup water
Salt
Vegetable oil for frying
Directions
Slice potatoes crosswise 1-2cm thick. Microwave for 3 minutes on HIGH.
Whisk together the flour, curry powder, salt to taste and enough water to form a batter that runs in a stream off a spoon.
Dip the potato pieces into the batter and deep fry briefly in vegetable oil for 2 minutes or until crispy and golden brown.
