Potato and Fetta Wontons
Ingredients
1 medium potato, peeled
50g butter or light olive oil
100g fetta cheese, cut into small cubes
Salt and black pepper to taste
Oil for deep frying
1 pack Wonton wrappers
1 tblspn chopped chives
Chutney or relish to serve
Directions
Boil and mash the potatoes with butter or light olive oil.
Fold in the cheese and chives. Season with salt and pepper.
Place one teaspoon of the mixture in the centre of each wonton wrapper, moisten the edges with water. Pinch edges to make dim sims or fold into wonton shapes
Heat the oil and deep fry until golden. Drain on a paper towel and serve with a chutney or relish.
