Seared Tuna with Baby Potato Salad
Ingredients
200g fresh Tuna
Olive oil
Salt and pepper
Juice of 1 lemon, optional
Mix together in a bowl:
250g baby potatoes (cooked)
200g fresh green beans (blanched)
1 bunch fresh water cress (leaves only)
1/4 cup capers (salted )and rinsed
Mix together in a bowl:
3 tablespoons of dijon mustard
1 tablespoon white wine vinegar
Directions
Heat a heavy frying pan with olive oil. Brush tuna with oil. Let it rest for 10 minutes then cut into large cubes.
Combine salad and dressing. Toss gently. Add tuna, season with salt and pepper to taste. Drizzle the lemon juice over. Serve immediately.
