Saffron Potato Salad
Ingredients
500g gourmet potatoes
100g pancetta or ham (2cm dice)
2 tblspns finely chopped chives
1 tblspn finely chopped celery
Pepper to taste
2 whole hard boiled eggs, peeled and quartered
Mayonnaise:
2 tblspn mayonnaise (good quality one)
Juice of one lemon
2 pinches saffron threads
50ml water
Directions
Cook the gourmet potatoes in boiling salted water until just cooked, drain and set aside to cool.
Add the pancetta to an oiled hot pan and fry until lightly browned.
Drain on paper towel. Combine potatoes, pancetta, eggs, chives and celery in a salad bowl. Season to taste.
Bring the saffron and water to the boil and allow to cool.
Add to lemon juice and mayonnaise. Mix until creamy. Drizzle over salad.
