Potato And Leek Soup With White Wine And Tarragon

Ingredients

1 large leek, cut in pieces
4 potato, peeled, and, cubed
1 large onion, chopped
2 garlic, cloves, chopped, (optional)
1 tsp dried tarragon or 1/2 cup fresh tarragon, chopped
1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tsp salt
1/2 tsp black pepper
1 bay leaf
7 cup vegetable stock
1/2 cup dry white wine
1/2 cup milk
1/2 cup table cream
1/4 cup fresh chopped parsley

Directions

Potato And Leek Soup With White Wine And Tarragon
1.Preparation time is 20 minutes.
2.In a large soup pot, combine the leek, potatoes, onion, garlic, tarragon, basil, oregano, salt, pepper, bay leaf and stock. Simmer 15 minutes or until potatoes are cooked.
3.Add the wine; simmer another 5 minutes. Remove the bay leaf.
4.Using a hand blender, purée the soup until smooth.
5.Stir in the milk and cream.
6.Garnish with parsley and serve.
