Potato Salad
Ingredients
2 lb potatoes, cooked, peeled and sliced
2 eggs, hard-boiled and diced
1 cup celery, diced
1/2 cup cucumber, diced
1/3 cup parsley, chopped
Vinaigrette dressing:
1 1/2 tsp mustard
5 tbsp olive oil
2 1/2 tbsp vinegar
3/4 tsp salt
pepper
cayenne pepper
paprika
Directions
Mix the dressing ingredients well. Marinate the potatoes in the dressing while they are still warm, add the remaining ingredients, mix well. Refrigerate at least 1 hour.
