Corn And Grilled New Potato Salad With Lime Mayonnaise
Ingredients
1 lb. new small red potato
3 ears fresh corn
olive oil, for brushing corn
Lime Mayonnaise
2/3 cup mayonnaise
1 tbsp minced lime, zest
1 tbsp fresh lime, juice
salt, to taste
pepper, to taste
Directions
1.Husk the corn and brush with olive oil.
2.Grill until the kernels begin to brown. Remove, cool and with a sharp knife cut kernels from ear. Reserve.
3.While corn is grilling, place potatoes in boiling water and boil for 10 minutes.
4.Remove and place on skewers. Brush with oil and grill until they begin to brown. Cut into quarters.
5.Prepare Lime Mayonnaise.
6.Add potatoes and corn to Lime Mayonnaise and toss well. Serve at room temperature.
Lime Mayonnaise
1.Whisk Mayo, lime zest and juice, and salt and pepper.
