Potato and Lemon Mayonnaise Salad
Ingredients
Salad
8 cups [2 L] potatoes with red skin, boiled [about 3 pounds / 1.4 kg]
1 medium onion, minced
2 garlic cloves, minced
2 tablespoons [30 mL] olive oil
2 tablespoons [30 mL] white wine vinegar
Salt and pepper, to taste
Pinch of red pepper
1/2 cup [125 mL] parsley, minced
1/4 cup [60 mL] chives, minced
1/2 cup [125 mL] home-made lemon mayonnaise
1/2 cup [125 mL] unflavored yogurt, low fat
Black olives, sliced [to garnish]
Home-Made Lemon Mayonnaise
2 egg yolks
2 tablespoons [30 mL] fresh lemon juice
1 teaspoon [5 mL] dry mustard
Pinch cayenne pepper
Pinch salt
1 cup [250 mL] vegetable or olive oil
Directions
Salad
Cut potatoes into pieces while still hot.
Place in a large bowl with onion and garlic.
Season with olive oil, vinegar, salt, pepper and red pepper.
Mix well; cover and refrigerate until cool.
Incorporate parsley and chives.
Combine mayonnaise and yogurt.
Coat potatoes with mayonnaise.
Rectify seasonings.
Garnish with black olive slices.
Home-Made Lemon Mayonnaise
Combine all ingredients except oil in electric mixer or culinary robot.
With machine still on, slowly add oil without stopping, until mixture thickens, about 1 minute
Two secrets behind a good potato salad: firm potatoes and a vinaigrette which is added while potatoes are still warm.
This recipe, unlike others, is not sweet!
This recipe was inspired by many potato salads prepared with all sorts of home-made mayonnaises which can be found in Paris markets.
This mayonnaise is easy to make and delicious; try it in ham sandwiches garnished with a tomato.
