Potato Stuffing
Ingredients
1 tablespoon [15 mL] butter
2 teaspoons [10 mL] finely chopped onion
2 cups [500 mL] crushed boiled potatoes [approximately 5 medium-size]
1 teaspoon [5 mL] sage
Salt and pepper, to taste
1 egg yolk, slightly beaten
4 tablespoons [60 mL] cream or milk
Directions
Melt butter; brown chopped onion.
Mix in crushed potatoes; season with sage, salt and pepper.
Beat in egg yolk and cream or milk until thoroughly mixed.
Heat for 5 minutes; cool.
Stuffing is now ready to stuff a bird, just before going into the oven.
