Baked Cheddar Cheese Potato Slices

Ingredients

2 medium-size baking potatoes
Melted butter
Salt and pepper
1 1/4 cups [310 mL] finely grated Canadian Cheddar cheese
6 bacon slices, cooked and crumbled
3 tablespoons [45 mL] finely minced green onion

Directions

Preheat oven to 375°F [190°C].
Peel potatoes.
Cut one thin slice at both ends of each potato.
Cut potatoes into 1/4-inch [6-mm] thick slices.
Dry potato slices with paper toweling; arrange slices side-by-side onto a lightly greased baking sheet.
Brush potato slices with melted butter; sprinkle with salt and pepper
Bake in preheated oven for 10 minutes, until tender.
In a bowl, mix together grated cheese, bacon crumbs and minced green onion; evenly sprinkle over potato slices.
Bake in preheated oven for 5 minutes, to melt cheese.
