Surprising Potatoes

Ingredients

12 mini unpeeled potatoes, washed
3 tablespoons [45 mL] butter
24 fresh mushrooms, cleaned and minced
2 shallots, minced
1 pack tiny shrimps
1 tablespoon [15 mL] freshly chopped parsley
1/2 cup [125 mL] grated Mozzarella cheese
A little grated Parmesan cheese
Salt and pepper, to taste

Directions

Prehet oven to 400°F [200°C].
Bake potatoes, wrapped in al foil.
Remove potatoes from oven as soon as they are done.
Using a small knife, slice top of each potato, 1/4-inch [1-cm] thick.
With a spoon, delicately remove half of potato meat.
Set aside emptied potatoes.
Cool.
Into a frypan, melt butter over medium heat.
Mix in mushrooms, shallots and shrimps; salt and pepper.
Fry for 3 to 4 minutes.
Preheat broiler.
Mix in parsley and grated Mozzarella cheese; mix well and cook for 2 minutes.
Check for seasonings.
Stuff reserved potatoes with mixture.
Sprinkle each potato with a little grated Parmesan cheese.
Broil stuffed potatoes for 3 minutes, until golden.
Serve.
