Sauteed Potatoes
Ingredients
2 cups [500 mL] potato dices
2 tablespoons [30 mL] peanut oil
1 tablespoon ]15 mL] butter
1/2 cup [125 mL] cooked bacon, crumbled
1 garlic clove, minced
1/4 teaspoon [1 mL] rosemary
1 teaspoon [5 mL] freshly chopped parsley
Salt and pepper
Directions
Into a casserole filled with lightly salted boiling water, blanch potato dices for approximately 3 minutes.
Drain and well dry potato dices.
Into a large frypan, heat together peanut oil and butter, until smoking; brown potato dices, turning often, until lightly browned on all sides.
Mix in bacon crumbs, minced garlic, rosemary and chopped parsley; salt and pepper, to taste.
Mix well; cook, stirring, until potatoes are dark golden brown.
Serve.
