Grated New Potatoes
Ingredients
1/2 cup [125 mL] butter
1/3 cup [80 mL] green onions, finely chopped
6 large new potatoes, sliced
1 3/4 cups [440 mL] grated Cheddar cheese
1 3/4 cups [440 mL] breadcrumbs
1 teaspoon [5 mL] Cayenne pepper
Salt and pepper, to taste
Directions
Into a small casserole, melt butter over medium heat; cook green onions until tender.
Layer potato slices, overlapping, into a 13 x 9-inch [3.5-L / 33 x 23-cm] oven-proof dish.
Pour melted butter and green onions over potato slices; salt and pepper.
Bake into a preheated 500°F [260°C] oven for 20 minutes.
Mix together grated cheese, breadcrumbs and Cayenne pepper.
Remove potatoes from oven.
Lower oven temperature to 400°F [200°C].
Sprinkle potato slices with grated cheese mixture.
Bake until golden, for 30 minutes.
