Fine Herbs Potatoes

Ingredients

2 1/4 pounds [1 kg] well scrubed potatoes, quartered
1 large onion, chopped
2 bay leaves
2 sprigs fresh thyme, 2 pinches dried
2 sprigs fresh sage, 2 pinches dried
1 tablespoon [15 mL] coriander seeds, crushed
Salt and pepper, to taste
2 ounces [56 g] butter

Directions

Lay half of potatoes over the bottom of a 10-cup [2.5-L] microwave-safe dish; sprinkle with half of chopped onion.
Add 1 bay leaf, half of thyme and half of sage.
Repeat layers.
Sprinkle with coriander seeds; cover.
Microwave for 30 to 35 minutes on 'MAXIMUM', stirring potatoes delicately at half-time.
Season with salt and pepper, dot with butter and serve.
To Vary
Use well scrubbed same size whole new potatoes, instead of quartered potatoes.
Use mint instead of thyme and sage.
