Bernard's Potatoes
Ingredients
6 to 7 medium-size potatoes
1 medium-size onion
1/4 pound [113 g] lean salted pork
Water
Salt and pepper, to taste
Directions
Peel and wash potatoes; reserve.
Peel and finely dice onion; reserve.
Cut salted pork into small dices; brown into a casserole, over medium heat.
Remove salted pork dices; drain onto paper toweling.
Add reserved potatoes and onion dices to casserole.
Pour in water, up to half of potatoes.
Sprinkle with salt and pepper.
Simmer until potatoes are tender.
