Bite-Size Potato Rolls

Ingredients

5 potatoes, peeled
1 egg, beaten
2 tablespoons [30 mL] butter
3 tablespoons [45 mL] freshly chopped parsley
1/2 cup [125 mL] breadcrumbs

Directions

Preheat oven to 350°F [180°C].
Boil potatoes in lightly salted boiling water.
Drain; dry potatoes in oven for 5 minutes.
Puree potatoes; mix in beaten egg, butter, parsley and breadcrumbs, until just firm.
Using two spoons, shape into bite-size potato rolls; arrange rolls onto a greased baking sheet.
Reheat in preheated oven for approximately 5 minutes.
Serve.
