Goat Cheese and Hazelnut au Gratin Potatoes
Ingredients
2 pounds Russet potatoes
2 1/2 cups heavy cream
1 sweet onion, diced
1 tablespoon fresh thyme, chopped
1 tablespoon garlic, minced
3/4 cup goat cheese
1/2 cup hazelnuts, peeled and chopped
Salt and pepper to taste
Directions
Wash potatoes well and slice them 1/8-inch thick. In a mixing bowl, combine onion, garlic, thyme and cream with 1/2 cup goat cheese and 1/4 cup nuts. Season mixture well and toss with potatoes. Layer potatoes at a 45-degree angle into a casserole dish that will fit the potatoes (not tight, not loose). Crumble remaining cheese and nuts over potatoes. Cover with foil and cook at 375 degrees for 45 minutes. Test potatoes for tenderness, and if they are tender, remove foil and bake another 10 minutes or until tops of potatoes are brown.
