Louisiana Potatoes
Ingredients
1/4 cups olive oil
1 tbsp freshly squeezed lemon juice
2 tbsp cajun spice
1 tbsp curry paste
1 pinch red pepper, flakes
pinch salt and pepper
1 lb. Yukon Gold potato
Directions
1.In a medium bowl, whisk together olive oil, lemon juice, Cajun spice, curry paste, red pepper flakes, salt, and pepper.
2.Scrub potatoes, cut into wedges and place immediately in marinade. Cover and refrigerate for one hour.
3.Preheat grill to medium-high and lightly oil rack. Grill potato wedges, turning occasionally, for 5-10 minutes (depending on size of wedges) or until outsides are crisp and golden and insides are tender
