Potatoes with Fried Parsley

Ingredients

2 tbsp oil
1 bunch parsley, chopped
3 cloves garlic, chopped
1 lb. Yukon Gold potato, cooked

Directions

1.Heat a fry pan over high heat, add the oil.
2.Add the parsley and garlic and cook until the parsley starts to become crisp, about 5 minutes.
3.Cut the potatoes into bite-sized pieces, add them to the pan, toss and serve.
