Ligurian Roasted Potatoes
LiRoasted Potatoes
Ingredients
4 Yukon Gold potato, cut into wedges
2 onion, cut into wedges
1 handful olives
1 sprig fresh rosemary, chopped or 1/2 tsp dried rosemary
3 tbsp olive oil
salt
pepper
Directions
Directions:
1.Preheat the oven to 375F.
2.Toss all of the ingredients together and place in a baking dish. Bake for 25 minutes, until the potatoes are done and are starting to become crisp.
3.Options: Add chopped onion; cherry tomatoes; tomato paste; anchovies.
