Blinis and Potato Pancakes with Caviar
Ingredients
Potato Pancakes:
3 Yukon Gold potatoes, peeled and shredded
1 egg, beaten
1/4 cup (5o mL) chopped chives
2 tbsp (25 mL) all-purpose flour
1/2 tsp (2 mL) baking powder
Salt and freshly ground pepper to taste
2 tbsp (25 mL) chopped parsley
Vegetable oil for frying
Garnish:
Sour cream and caviar
Directions
1. Squeeze potatoes in a tea towel to remove the liquid. Place in a large bowl and stir in remaining ingredients.
2. In large skillet heat enough oil to coat the base of the skillet. Drop about 1 tbsp (15 mL) mixture per pancake into oil and flatten. Fry until crisp on one side, about 1 minute, repeat on second side. Drain on paper towels.
3. Top with sour cream and caviar.
Use the best beluga caviar, inexpensive salmon caviar or smoked salmon for a luxurious New Year's hors d'oeuvre. Serve this dish of caviar set in ice to keep it cold. Present the blinis and potato pancakes around it and set out the usual accompaniments, sour cream, chopped red onions and grated egg. Use a non-metal spoon for the caviar, as a metal spoon will tarnish.
