Award Winning New Potatoes and Beans
Ingredients
2 large heads of garlic
5 tbsp olive oil (75-90 millilitres)
2 lb. small, new red potatoes, halved (900 grams)
1 lb. fresh green beans (450 grams)
1 Spanish onion, sliced
Salt and pepper
Directions
1.Cut off the tops of garlic heads to expose the ends of the cloves. Place in a baking dish. Drizzle with 1 tablespoon of olive oil over each head. Bake in a preheated oven at 350 degrees Fahrenheit (180 degrees Celsius) for 30 to 40 minutes or until garlic is soft. Drizzle occasionally with oil.
2.Parboil beans and potatoes. Drizzle 1 tbsp. of olive oil in a large baking dish. Add potatoes, beans and onion. Scoop out garlic and spread on top of vegetables. Season to taste with salt and pepper. Drizzle another tablespoon of olive oil on top.
3.Bake at 350 degrees Fahrenheit (180 degrees Celsius) for 30 minutes, stirring occasionally.
