Sliced Potato Pizza
Ingredients
5 potato
1 onion, thinly, sliced
2 tbsp olive oil
1/2 sweet red pepper, slivered
2 cloves garlic, minced
1 tbsp minced fresh parsley
1/2 tsp salt
1/4 tsp dried rosemary
1/4 tsp pepper
1/2 cup shredded provolone cheese or 1/2 cup shredded mozzarella cheese
1/4 cup freshly grated parmesan cheese
Directions
1.Preheat oven to 450 degrees F (230 degrees C).
2.Scrub potatoes and slice thinly.
3.In bowl, toss together potatoes, onion and oil.
4.Stir in red pepper, garlic, parsley, salt, rosemary and pepper.
5.Brush 12-inch (30 cm) round pizza pan with oil; spread with potato mixture.
6.Bake for 15 minutes or until tender, brown and crisp.
7.Sprinkle with provolone and Parmesan cheeses; bake for 5 to 8 minutes or until golden brown.
